docs(site): the Charcoal theme, offline, and the star that comes off

Refreshes the whole screenshot set to the app as it ships now — the three-line note rows, the lightened calendar — and adds two Charcoal captures, the theme modelled on Apple Notes, since it is the one worth showing. The landing page and the docs home both gain it, a "holds through a short network drop" line, and the correction that a starred or flagged mail now loses its mark once it is a task rather than keeping it.
